Yunnan cuisine
 

Yunnan cuisine is an amalgimation of Han and Chinese minority cuisines. As the province with the largest number of ethnic minorities, Yunnan has a great variety of food, and it is difficult to make generalisations. It could be argued, however, that Yunnanese food is quite spicy (compare Sichuan cuisine) and makes greater use of mushrooms than most Chinese cuisines.

Famous dishes of Yunnan include:

boluo fan (Pineapple rice, found in Xishuangbanna and possibly other Dai areas)
guo qiao mi xian ('Crossing the bridge' or 'Across the bridge' noodles, found across the province)
pu'er cha (Pu'er tea, traditionally grown in Simao)
shiping doufu (Shiping tofu)
erkuai(highly refined and compressed rice cakesErkuai)
rubing(goat milk cheese, from Bai cusine in the area near Dali)
