Fujian
cuisine is derived from the native cooking style of the
province of Fujian, China. Well-known dishes include:
yue wan (Fujian fish balls), and ban mien bian ruo (noodles
with dumplings).
One
of the most popular dishes is Fotiaoqiang (literally "Buddha
jumps over the wall"), a complex dish making use
of many ingredients, including shark fin, sea cucumber,
abalone, and Shaoxing wine.
There
are many eating places around the province that sell these
specialities for two yuan, and which are thus known as
"two-yuan eateries".
